April 1, 2020 — This is NOT an April Fool's joke. These brownies are ~37 calories and only have 1.7 grams of sugar! This is the perfect quarantine dessert (or breakfast) if you're trying to work on that summer bod while being locked away in your tower. I originally saw this recipe here, but I gave it a go and made some modifications, so I added my personal touch on the recipe below. Happy Baking!

37 Calorie Brownies
INGREDIENTS:
¾ cup Nonfat Greek Yogurt 1*
¼ cup Skim Milk 2*
½ cup Cocoa Powder
½ cup Old Fashioned Rolled Oats
½ cup Truvia 3*
1 egg
1 tsp. baking powder
Pinch of salt
Optional: Mini semi-sweet chocolate chips
1 tsp. vanilla extract
1*I used Fage brand - 0%.
2*you can use whichever milk you prefer. I wouldn’t suggest almond because it’s a little on the thick side, and coconut milk is slightly too thin.
3*I used Stevia... it’s all the store had because people are savage right now.
DIRECTIONS:
Preheat the oven to 350 degrees. Combine all ingredients into a mixing bowl OR a NutriBullet/Ninja. I used my NutriBullet. Mix on medium-high for
about 1 minute, or until ingredients are combined. If using a NuriBullet or other mixing product, beat on automatic setting for about 1 minute. The batter may be a little runny compared to regular brownie batter, but don’t fret, mine was too and they turned out great!
*Optional : Top brownie batter with mini semi-sweet chocolate chips before baking.
Grease a square baking dish. I used a 9 x 11 dish for 12 thinner brownies... you can also use an 8 x 8 for 9 thicker brownies. Pour brownie batter into pan and bake at 350 degrees for 20 minutes.
Use a toothpick or your instincts to test that the brownies are cooked throughout.
Let cool for about 5 minutes and enjoy!
**I did notice that the brownies tasted even better after completely cooled... and even the next day. Hope you like!
