Since you’re going to be digging through your refrigerator or pantry, here’s a list of condiments that you should probably toss out because they’ve most likely already gone bad.

  • Fast Goodbye Condiments: These are items that can last a few days to a couple of weeks. Look for items that contain fresh vegetables, dairy or anything that doesn’t have a lot of vinegar or salt for preservation. That includes:
    • Fresh Salsa (5 -7 days) - the shelf-stable salsa can last longer
    • Pasteurized Sauerkraut (5 - 7 days)
    • Sour Cream (1 - 3 weeks)
    • Tahini (3 weeks)
    • Pesto both fresh and jarred (1 - 2 weeks)
  • Short Term Condiments: These are items that go bad within 2 to 4 months. They are often oil or egg based, they may not grow mold fast, but the ‘fats’ can go rancid causing that unpleasant sour taste in your mouth.
    • Mayonnaise (2 months) - yikes I’m guilty of this! Even worse if you make your own it only lasts a week
    • Creamy Salad Dressings (2 - 3 months) - again guilty!
    • Barbeque Sauce (4 months)
    • Horseradish (3 - 4 months)
    • Chutney (1 - 2 months)
  • Mid-Range Condiments: These condiments can last anywhere from 6 to 9 months. These are items with higher acidity or sugar which helps with preservation.
    • Ketchup (6 months) - I’m probably still guilty!
    • Tartar Sauce (6 months)
    • Picked Jalapeños (6 months) - but that’s only if they remained submerged in the liquid brine
    • Vinaigrettes (6 - 9 months)
    • Relish (9 months)
  • In it for the long haul condiments: These condiments can last 6 months - 2 years, they are usually acidic or salty and it’s why the stay “good” for so long.
    • Mustard (1 year)
    • Pickles (1 year)
    • Maple Syrup (1 year)
    • Jarred Olives (1 year)
    • Raw and Fermented Sauerkraut (6 months to a year)
  • Lasts forever condiments: These can last 2 or more years. You’ll know when they go bad because they lose flavors or change colors after several years
    • Soy Sauce (2 - 3 years)
    • Worcestershire Sauce (3 years)
    • Hot Sauce (3 - 5 years)
    • Honey (indefinite) - if it crystalizes melt it back down
    • Vinegar (indefinite)
