Cherries have just been called the healthiest fruit to eat this summer sighting health benefits like better sleep, rich in antioxidants and nutrient power houses. So as a cherry girl I decided it’s time to share some of my favorite cherry snacks and meals to add to menu this summer!
- Cherry & Pistachio Overnight Oats: Layer rolled oats with almond milk, a dash of vanilla, and a handful of halved cherries. The sweetness of the cherries pairs great with the crunch of the pistachios.
- Cherry & Goat Cheese Flatbread: Spread a thin layer of ricotta or goat cheese on a flatbread, top with halved cherries and arugula, bake until crisp. A drizzle of honey and olive oil ties it all together.
- Savory Cherry Crostini: Toasted Baguette slices topped with a smear of herbed cream cheese and balsamic marinated cherry-pickled onion mix. The tartness from the cherry paired with the almost sour bite of the pickled onions and the sweetness of the balsamic turns this tired snack into a fresh summer treat.
- Grown Up Snack Box: Instead of a standard trail mix, create your own snack box centered around the rich flavors of dried cherries. Add cubes of aged cheddar or Manchego, smoked almonds and dark chocolate morsels.
- Sweet Cherry Caprese: This is a fresh seasonal twist on a light classic salad. Replace the tomatoes with sweet cherry halves mixed with fresh mozzarella pearls and balsamic glaze to stick to the cherries and mozzarella pearls. The sweetness from the glaze helps pull the unique taste of the cherries and fresh mozzarella together.
- Summer Honey Cherry Baguette: this is a fresh take on breakfast, snacking or a delightful dessert. Slice your baguette diagonally to get more surface area. Lightly toast the bread with olive oil or butter, next add a scoop of cold cottage cheese and halved cherries (or dried cherries if you so prefer). Finally drizzle some honey on top. If you want to add a little zing to this snack add a pinch of salt to take this tasty snack to savory.
